So it is still up for debate if the hand is really quicker. There are things that the eye cannot follow even if you are looking directly at the object. This "quicker than the eye" concept allows for startling magic without any cover.

I can think of few popular effects that use this principle off the top of my head.
The Snap Change
Cardini Change
Paddle Move
Flip Stick Move
Snap Back by Derek Fritz

What other effects are "quicker than the eye" in this sense?

Get a copy of THE TRICK BRAIN by Fizkee. It lists all the principles of magic and what you're discussing is one of them. As I recall it's worded something like 'removed from vision quickly' or something like that.

All sorts of tricks fall into this catagory, eveyrthing from a elastic pull (cigarette or silk vahisher), to a spring-loaded trap door in a dove platform (balloon to dove). If I had a magic catalog handy I could go through it and tell you exactly what tricks use this method.

You should invest in that Fitzkee book, it's the magic inventor's handbook. I've had to buy another copy, my first one is so dog-eared and full of notes along the borders, not to mention all the post-it notes, that I've had to invest in a second copy...and make no mistake, like Rice's Encyclopedias of Silk Magic, this book is a investment you cannot live without.
