Contracts??? We are booked until some says "you're fired!" And yes I have fired restaurants over the years but never been fired by a restaurant. My fee is good for Cincinnati OH, where i live, it may not be good anyplace else. i.e. Los Angeles, it is way too high because so many kids are working for just tips so they don't pay. I have heard that New York City pays over $100 a night. You just have to test the market where you are.
