I do a variety of things. Sometimes I will throw the deck and say I hate cards anyway, and go into another effect (it works for me as I do a lot of comedy magic). I only do this on stage though.
Otherwise, I usually have either Kollasol Killer set-up (the original version) or an Invisible Deck.

I use the invisible deck, if its the wrong card, just say " funny thing, i flipped over that card in my other [edited] before you even told me the card"

The very smarmy response would be:

Don't ever reveal a card that isn't theirs, unless it's part of the routine.

If there is the slightest chance that you could mess up a move, don't perform thateffect. You should never, ever, perform an effect without having it down so smooth that you can do it with your eyes closed.

There are two pieces of advice I insist that my students follow;

1) Practice, practice, practice until your fingers bleed.

2) Practice some more.

if you truelly mess up, pay little attention to it, and go into another effect.

you want to get attention of the fact you mess up, and get their attention on something else. simple as that.

If you perform card tricks to children and adults or at the local bar then you will learn very quickly to have them share with the audience around them visually "their" card or have them write it down on a napkin and turn it face down. If you dont you will get people that forget, it happens, or better yet two people that just want to sweat you. It stinks but not everyone wants you to look good. Have them write it down and usually they are not going to mess with you on it.
