Get a DVD or book on the subject. Personally, I like Tony Clark's sources on the subject.

I got the doves there great ,and i got dove 101 hope it is a good dvd.

Joy of Cooking, page 137 has a fantastic recipie for dove. mmmmm, That's good eating. Make sure you get enough for the entire family as there is not enough meat for more than one.

Cook them properly or they will be too tough.

Well I like the dove pan. I don't have a dove but that is what it is for. I use it for candy. It can use fire and then after the fire a dove is there.
