What are some good one liners to use when picking someone from the adiance.

I'd always use Andy Nyman's method for picking spectators which he explains on Get Nyman. Briefly, without going into detail, you look directly at someone and don't give them a chance to say no before you start the round of applause for them. Never ask for volunteers.

If I want a 'random' selection made then I go do the route I first saw on Derren Brown - throwing something out into the audience and asking them to bring it back on stage if they catch it.

Just kidding...I'd throw frisbees.

And in the Copperfield video.."[edited]" didn't look too happy.

I use foam bricks and occasionally, I'll use foam rocks. I perform something VERY similar to the Copperfield "graffiti illusion", and they work wonderfully.
