I "get what you mean", I just don't know how my statement implies that in any way.

The Restaurant Worker's Handbook by Jim Pace, Making a Living Entertaining in Restaurants by Peter Lansing, and I saw one at my local shop that looked really good, it's called Restaurant Portfolio by Bruce Calver. There's 3 books that are written by real restaurant workers. All of them know their stuff, so any one could guide you in the right direction.
