So the dark straps attached to the sleeves go through the loops on his arms and then tied on his back?

Yes, after the arms (sleeves) go through the loop on the chest.

i'm just about to order my first straight jacket for fun/practice, can you guys offer me advice on what size to get? I fit comfortably into most medium shirts, coats etc. I heard it's better to go for approximately 1 size larger than what you normally wear, is this correct? Should I go for a M, L, XL jacket in your opinion?

You are correct, go for a large if a medium fits you right (not to tight).

The arms go through two straps on the chest and then the straps at the end of the sleeves go through the straps on the side of the arms and around back where they are buckled.

have you ever used or felt this fabric before? and who will be making the jacket? (hooray my first strait escape a while ago only took like 5 mins ;D , now it's about 30-45 seconds tops, just need to work on patter for a exciting 2 min escape :S )

yea, it is a bit risky ordering fabric online if you have no idea how it feels, might be uncomfortable or cause other problems, anyway take some pictures for us when you've finished your jacket :D

Yeah definitely. I started messing around with the sewing machine last weekend doing some practice stitches to get used to it. Hopefully i can go out this weekend to get some fabric
