I do not understand what you mean about moving the watch more without having to use your whole hand. Not sure what technique you are using and for which type of watch. A buckle type latch should come off in about 3-5 seconds with proper practice. If you are doing the watch steal during another trick as cover then of course you can delay the steal according to the flow of your performance.
