SNAPS - How forcing card with STOP?

In Dan Harlan's SNAPS there is the trick with the STOP card, starting on minute 30:30. The spectator is putting one card after the other onto the deck, until she by herself decides to stop. The last dealt card is the card with the stop sign and I don't see any manipulation by Dan Harlan. In his explanation he is dealing the deck for the spectator, taking the card with the stop sign from the bottom instead of the top. First I'd like to have an explanation of what can be seen with the spectator and second: most spectators will say stop when I place the card on the deck, so adding another card from the bottom would be very obvious. Please excuse my poor English, I hope I could make myself understandable.
